Whiz Bang Mayo

This is a really quick mayonnaise that I make using a stick blender. It takes around 30 seconds to a minute to make and it is much better than buying a store bought mayonnaise as it is free from vegetable oils and other preservatives and fillers that keep it shelf stable. I prefer to make it myself and I will make it once a week.
Note: there is also a recipe to use if you have a food processor below

Ingredients
1 egg
1 TBL Dijon mustard
1 TBL Apple cider vinegar
1 cup mild olive oil
1 tsp salt
1. Place all ingredients into a jar
2. Grab a stick blender and blend slowly until staring to combine then increase speed until well combined
3. Taste and season appropriately adding more acid if you need to or adding some water to thin it out
Should keep for about a week
If making in a food processor follow this method
( you may need to double this recipe depending on this size of your food processor)
1. Place egg, mustard,apple cider vinegar and salt into food processor and whiz until well combined
2. Slowly add oil in stages until thick
3. Taste and season appropriately adding more acid if you need to or adding some water to thin it out
Should keep for about a week
